Baden-Württemberg's organic push quadruples sustainable meals in schools and kitchens
A two-year project in Baden-Württemberg significantly boosted the use of regional organic products in communal catering. Known as Enjoy Organic Together, the initiative helped 16 institutions revamp their meal plans with more sustainable and locally sourced ingredients.
The project ran as the second phase of a broader effort, building on work from January 2021 to December 2023. Its main goals were to cut food waste, refine meal offerings, and increase the share of organic and regional ingredients. By the end, the average proportion of organic ingredients in meals had quadrupled, rising from 7% to around 30%. Meanwhile, the use of regional products doubled.
Participants included caterers, producers, and local food artisans. Support came from Baden-Württemberg's 14 organic model regions, which helped strengthen ties between regional suppliers and communal kitchens. Minister Peter Hauk highlighted the project's success, noting how communal catering can drive demand for organic produce.
Further details about the organic model regions, including contact information, are available online.
The initiative has left a measurable impact on local food systems. Institutions now serve more balanced, sustainable meals with a far greater share of organic and regional ingredients. The results demonstrate how targeted projects can reshape catering practices while supporting local producers.
