Russian scientists patent probiotic marshmallows for gut-friendly treats
A new method for producing marshmallows has been officially registered with Rospatent. The patent, granted on 14 April 2026, belongs to Omsk State Technical University. The invention introduces a confectionery product containing a probiotic, offering a novel twist on a traditional treat. The process begins with a water-gelatin mixture and a syrup, which are combined and whipped together. Citric acid is added at the end of this stage. The mixture is then cooled, and Limnospira fusiformis powder, Bifidumbacterin probiotic, and thaumatin are incorporated.
Once ready, the mixture is piped into molds and stabilised. After removal, the marshmallows are dusted with starch to complete the process.
The inventors behind the method are Elena Molibog, a Doctor of Technical Sciences and professor at the university, and Anastasia Polyakova, a bachelor’s student at its Art and Technology Faculty. The Federal Service for Intellectual Property has now recorded the patent under the name 'Omsk marshmallow.' The university holds the rights to this new production technique. The inclusion of a probiotic sets this confectionery apart from conventional versions.
