January's cold, dark days can leave many feeling low after the holidays. To lift spirits, the Buddhist Tzu Chi Foundation in Hawaii is sharing a simple, hearty recipe: Black Bean and Veggie Soup. This nutritious dish serves four and requires just a slow cooker to prepare.

The foundation's Hawaii branch has been supporting the community since 1995. Through disaster relief, medical aid, and education, it also champions vegetarian living. Weekly cooking classes, food distributions, and advocacy have encouraged healthier diets across the island.

The Black Bean and Veggie Soup combines black beans, diced tomatoes, and vegetable broth with olive oil, potatoes, corn, carrots, celery, and onions. Basil and oregano add extra flavour. For a crispy side, a baguette can be warmed at 350 degrees for four minutes.

The Tzu Chi Foundation's local office is in Kaimuki. More details are available at facebook.com/hawaiitzuchi or by calling 808-737-8885.

This easy, warming soup offers a boost of energy during January's gloomy stretch. The foundation's ongoing efforts also help residents adopt healthier, plant-based meals. Both the recipe and their wider work aim to improve well-being in the community.
