Modified food starch, a common ingredient in processed foods, is used to thicken sauces, stabilize textures, and extend shelf life. Despite its widespread use, research suggests it may contribute to serious health issues, including insulin resistance and heart disease. Yet no country has issued official warnings about its risks, leaving consumers to navigate labels on their own.
Modified starch is created by chemically, physically, or enzymatically altering natural starches from sources like corn, wheat, potato, rice, or tapioca. In the US, most modified cornstarch comes from genetically modified crops treated with herbicides. On ingredient lists, it appears under names like modified food starch, maltodextrin, dextrin, or pre-gelatinised starch.
These starches, particularly maltodextrin, act like sugar in the body. They cause rapid blood sugar spikes, followed by sharp insulin surges and crashes. Over time, frequent exposure can lead to insulin resistance—a key factor in high blood pressure, artery damage, heart attacks, and strokes. Chronic consumption is also linked to weight gain, visceral fat buildup, and inflammation.
Tapioca starch, though less likely to be genetically modified, behaves similarly. Derived from cassava root, it still breaks down quickly into glucose, triggering the same metabolic disruptions. Because modified starch is a hallmark of ultra-processed foods, avoiding it means checking labels carefully and asking questions when eating out.
Regulators, including those in the EU, classify modified starch as safe, and no government has released specific health warnings about its long-term effects. This leaves consumers responsible for limiting intake if they wish to reduce potential risks.
For better heart health, experts recommend focusing on whole, unprocessed foods rich in protein, healthy fats, and fiber from vegetables and some fruits. Cutting out refined starches—including modified versions—may help stabilize blood sugar and lower the risk of insulin-related diseases. The choice ultimately rests with shoppers, as no official guidelines currently restrict its use in food production.
