Between 2000 and the mid-2010s, soybean oil consumption in the US surged from around 11 million metric tons to a peak of 17-18 million. By 2024-2025, usage dipped slightly to about 15-16 million metric tons as some consumers shifted toward healthier alternatives. Still, it holds a dominant 35-40% share of the edible oil market—well ahead of palm oil (10-15%), canola oil (15-20%), and corn oil (5-10%).
Frances M. Sladek, a professor of cell biology and toxicologist, argues that findings from animal studies on soybean oil's effects can apply to humans. The oil's fatty acid composition may alter fat storage, potentially contributing to weight gain. Sonia P. Deol, an assistant professional researcher, adds that modern diets—full of easily accessible food—could push the body into a 'starvation mode,' disrupting normal metabolism.
The research highlights possible risks tied to soybean oil's widespread use. With obesity rates climbing, scientists continue to examine how dietary fats influence long-term health. Further studies may clarify the oil's role in fat storage and metabolic changes.
