Scientists have uncovered why people often crave dessert even after a full meal. The phenomenon, sometimes called the 'separate stomach' for sweets, is not due to an extra stomach but a hardwired brain mechanism. Researchers at the Max Planck Institute for Metabolism Research identified the neural circuits responsible for this behaviour.

The study focused on pro-opiomelanocortin (POMC) neurons in the hypothalamus, which manage both fullness and food cravings. These neurons release beta-endorphin when exposed to sugar, activating reward pathways in the brain. This drives continued eating, even when energy levels are sufficient.

In experiments with mice, sugary foods led to six times higher calorie intake than regular meals, even after the animals were full. Brain scans in humans showed matching activation patterns, confirming the same neural process operates across species. The mechanism evolved to prioritise sugar consumption in natural environments where high-energy foods were scarce.

Additional factors, such as stomach adaptability, meal timing, and social habits, further strengthen dessert cravings. The research also revealed that POMC neurons respond rapidly to food smells and sights, reinforcing the urge to eat sweets regardless of satiety.

The findings explain why many people feel hungry for dessert despite being full. This neural response, conserved across mammals, persists in modern environments where sugary foods are abundant. The study provides a clearer understanding of how the brain balances satiety and reward signals.
